Peanut Butter Cookies
Makes 19-20 cookies
Ingredients
- 8 oz. softened unsalted butter
- 1 1/4 cups creamy peanut butter
- 1 cup sugar
- 1 cup packed light brown sugar
- 2 eggs
- 1 tsp. vanilla
- 3 cups all purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup chopped salted peanuts
Method
Cream butter, peanut butter and 2 sugars together until thoroughly mixed. Add 2 eggs and vanilla. Whisk together the flour, baking soda and salt and add to the peanut mixture, combining well. Stir in the 1/2 cup of chopped peanuts. Form into 2" balls and place on a greased or parchment lined cookie sheet. Press down lightly with the tines of a fork to make a cross hatch pattern and sprinkle with sugar. Bake at 350 degrees for 9-12 min or until the edges are brown.
