Confit of Cherry Tomatoes

Ingredients
  • 6 cups cherry tomatoes
  • 1/4 cup chopped fresh basil
  • 1 tsp. fresh rosemary, chopped
  • 1/2 tsp. Kosher salt
  • 1/2 tsp. black pepper
  • 1/2 cup olive oil
  • 1/2 tsp. chopped garlic
Method
  1. Cut large tomatoes in half, then mix with remaining ingredients.
  2. Bake in shallow pan for 20 minutes at 375 degrees.
Suggested uses: delicious over pasta, with or without pesto, and over goat cheese on crostini.
