Confit of Cherry Tomatoes
Ingredients
- 6 cups cherry tomatoes
- 1/4 cup chopped fresh basil
- 1 tsp. fresh rosemary, chopped
- 1/2 tsp. Kosher salt
- 1/2 tsp. black pepper
- 1/2 cup olive oil
- 1/2 tsp. chopped garlic
Method
- Cut large tomatoes in half, then mix with remaining ingredients.
- Bake in shallow pan for 20 minutes at 375 degrees.
Suggested uses: delicious over pasta, with or without pesto, and over goat cheese on crostini.
