Apple Cinnamon-Stuffed Pork Chops

Serves 6

Ingredients
  • 6 each, 2" boneless pork chops, split
  • 1 1/2 cup fresh bread crumbs
  • 2 Granny Smith apples
  • 1/4 cup butter
  • 1 cup diced white onions
  • 1 cup diced celery
  • 2 Tbs. chopped fresh sage
  • 1 tsp. dry thyme
  • 3/4 cup chicken broth
  • 1/4 tsp. salt
  • 1/4 cup black pepper
  • 1 Tbs. cinnamon
  • 2 Tbs. sugar
  • 1 cup apple cider
Method
  1. To split pork chops: lie on their sides and cut 3/4 way through then open
    like a book to stuff.

  2. Melt the butter and sauté the vegetables and herbs for 4 - 5 minutes

  3. Add chicken broth to mixture

  4. Mix the diced apple, bread crumbs, salt and pepper in a large bowl.

  5. Mix the vegetables with bread crumbs until all the crumbs are moist.

  6. Stuff each pork chop and top with cinnamon and sugar.

  7. Bake at 350°F for about 30 minutes, until pork is heated to 150°F.
